Our first ever LIVE cooking class will be taking place tomorrow at 6pm EST and I CAN NOT WAIT!!! If you can’t make it, do not fret because all classes will be recorded.
What we’ll be making: sosis bandari, a super popular street food sandwich in the south of Iran. It directly translates to “port sausage”, as the sandwich comes from the port cities in Iran. It’s spicy, meaty, saucy, rich, and everything that’s right with sandwiches.
Why’d I choose to make sosis bandari? First of all, it’s delicious. It’s not too hard to make and you probably have most of the ingredients already. We’ll be doing a fair bit of knife work–we’ll properly learn how to evenly dice a potato, slice an onion, garlic, chilies, and more. We’ll learn heat management–how heat affects different ingredients. We’ll learn how to create killer condiments–this scallion-dill mayo I'm about to show you will change your life. WOW, I’m so excited for this sandwich now. Can’t wait.
I understand that this may not be the healthiest recipe, or that you might not like something in there, or that you might not want to go buy ingredients you may only use once. I want you to get the most out of this class. Feel free to skip any ingredients or make substitutions. For example: if you want to use chicken, beef, lamb, or their ground versions instead of a hot dog, that’s FINE. If you want it less carb heavy, feel free to skip the potatoes or don’t even make it into a sandwich. If you’d like to use any herbs in place of dill that you might already have, GO FOR IT. I think you get my point here. Do this class how it serves YOU. I just want to get your asses in the kitchen and learning.
Here’s what you’ll need for the class–makes about 4 sandwiches, this is the same recipe as on my website. Let me know if you have any questions!
For the Sosis Bandari
14 oz beef sausages or hot dogs
7 oz potatoes
4 medium onions
8 garlic cloves
1 fresno chili (or chili of choice–you can sub extra chili powder)
4 tbsp tomato paste
1 tsp turmeric
1 tsp paprika
1 tsp coriander
½ tsp black pepper
Oil or fat of choice
Salt to taste
½ c water
Scallion-Dill Mayo
1 c mayo
4 scallions
1 bunch dill
1 lemon
1 tbsp mustard (whole grain dijon recommended but ANY is fine)
Salt & pepper to taste
For Sandwich Building
Baguette (or bread of choice)
Lettuce (iceberg recommended, or any leafy green works)
Tomato
Pickles
